I like to eat a lot. :-)
This page describes the diet I desire to have: http://zenhabits.net/plants/. It is like vegan, but not strict, and not political. The "What to Eat" section was very useful. The FAQ has excellent links on good vegetarian sources of protein, iron, and calcium.
I like that the page lists ideas for recipes. These two pages had some good ones too: http://www.nomeatathlete.com/vegetarian-lunches/ and http://www.nomeatathlete.com/rice-and-beans/
I would especially like to try out this mac and chard recipe: http://www.nomeatathlete.com/robin-robertson/
It seems that the advice for vegetarians is the same as the advice for more meat-centered diets: drink more water, exercise, eat lots of veggies with different colors (greens, reds, oranges, etc.) and more raw and less processed foods. Spirulina, kale, seaweed, flax seed and nutritional yeast provide the nutrients necessary in vegan diets.
